Outdoor Kitchen Planning: Utilities, Layout, and Cost
The grill is the cheap part. Where the services run, how much counter you need either side of the heat, and which materials survive being left outside.

The grill is the part people choose first and the part that matters least to whether the finished kitchen works.
What decides that is where the services run, how much counter sits either side of the heat, and whether the materials survive a winter outside. Those three are also where the money goes.
Work out the utilities before anything else
Everything else can be adjusted later. Buried services cannot.
- Gas. A natural gas line removes the propane tank entirely and never runs out mid-cook. It has to be trenched, sized for the appliance load, and almost always installed and inspected by a licensed trade.
- Electricity. Needed for lighting, a fridge, an ignition, sockets. Outdoor circuits must be weather-rated and protected by a GFCI or RCD.
- Water and drainage. A sink is a genuine convenience and the most commonly cut item. It also needs a drain, and in cold climates a way to drain the line down before winter.
- Drainage of the site itself. The slab needs a fall away from the house, exactly as a patio does.
Permits and licensed work are not optional here
Gas and electrical connections almost always require permits and licensed installers, and permanent roofed structures usually need approval as well. Beyond the legal position, an unpermitted gas line can invalidate home insurance after a fire. Check the rules before you design, because setback distances from boundaries and buildings may determine where the kitchen can go at all.
Layout
The whole design comes down to one thing: somewhere to put things down.

Shapes:
- Straight run — simplest and cheapest, works against a wall or boundary.
- L-shape — separates hot zone from prep zone; the most useful layout for most gardens.
- U-shape — everything within reach, needs real space.
- Island with bar seating — sociable, but the cook faces away unless you plan it carefully.
Put the cook facing the guests if you can. An outdoor kitchen where the person cooking stares at a fence for an hour defeats a large part of the point.
Think about smoke and prevailing wind. Site the grill so smoke drifts away from the seating and away from the house windows, not into them.

304 versus 430 stainless is the detail that decides longevity
Grade 430 stainless contains no nickel, costs less, and is what cheap outdoor kitchen doors and appliance skins are made from. It rusts — visibly, within a season or two, and faster near the coast. Grade 304 contains nickel and holds up. Manufacturers who use 304 say so in the specification; manufacturers who use 430 usually just say “stainless steel”. Ask.
Engineered quartz is an indoor material. The resin binder yellows and degrades in UV, and many manufacturers explicitly void the warranty outdoors. Granite, porcelain and concrete are the straightforward outdoor choices.
Roofing and ventilation
A roof genuinely extends the season — it lets you cook in rain and takes the edge off summer sun.
It also creates a requirement that is regularly ignored: a grill under a solid roof needs proper overhead ventilation. Combustion under cover concentrates carbon monoxide, and grease-laden vapour accumulates on the underside of the structure. That means a vent hood rated for the grill’s BTU output and ducted out, not a decorative canopy.
Never operate a grill inside a fully enclosed structure, whatever the ventilation.
If the budget will not stretch to a rated hood, an open pergola with an open top over the seating and the grill left in the open is a better plan than a solid roof over the cooking zone.
Appliances, in order of usefulness
- The grill. Built-in, sized to how you actually cook. See griddle vs grill for whether a flat top belongs here too.
- Counter space. Not an appliance, and more valuable than any of the ones below.
- A sink. Transforms how usable the space is; needs water and drainage.
- Storage. Weatherproof drawers and cabinets, so tools live where they are used.
- A fridge. Must be an outdoor-rated model — an indoor fridge fails quickly outside.
- A side burner. Useful for sauces and boiling; often installed and rarely used.
- A pizza oven or smoker. Excellent if you will use it weekly, an expensive ornament otherwise.
Cost, honestly
- A few hundred to a couple of thousand: a good freestanding grill on a paved area, plus a prep cart and a storage box. This covers most people’s actual usage.
- Several thousand: a modest built-in island — masonry frame, mid-range built-in grill, stone counter, storage doors.
- Ten thousand and up: a full installation with utilities trenched in, sink, fridge, roof and seating.
The variables that move the number most are utility runs and whether you roof it. The grill itself is a modest fraction of a built installation.
Build it in stages, with the services in first
Trench and cap the gas, water, electrical and drainage runs while the ground is open, then pour the slab. You can add the island, the counter and the appliances over several seasons as budget allows. What you cannot easily do is add buried services under a finished patio — that means breaking up what you just built.
A common mistake worth avoiding
Building an outdoor kitchen far from the house because that is where there is room. Every trip for a forgotten item is now a walk, and in practice people stop using it.
Close to the back door, with a clear path, gets used. Beautiful and distant does not.
