How to Turn Off a Charcoal Grill (And Put Out the Coals)
Close the lid and shut every vent — starving the fire of oxygen is the method. Why water is the wrong answer, and how long the ash stays dangerous.
On this page
Close the lid, shut every vent, walk away. A charcoal fire runs on airflow — cut the oxygen and it goes out. There is no switch, and water is the wrong answer.
The method
- Stop adding fuel and close the lid.
- Shut every vent — top damper and bottom intake, fully.
- Leave it for 48 hours. Do not open it to check; each look lets air in.
- Confirm the coals are cold through a glove — not merely not glowing.
- Ash into a lidded metal container, stored away from the house and decking.
Never bring a grill indoors to finish cooling
Charcoal produces carbon monoxide while it burns and keeps producing it while it smoulders.
A grill moved into a garage, a shed, a porch or any enclosed space to get it out of the rain has killed people. There is no version of this that is safe, including “just inside the door with it open”.
Why not water
| Close the vents | Pour water in | |
|---|---|---|
| Speed | 1–2 hours for flames | Immediate |
| Safety | Safe | Steam and ash cloud — scald risk |
| The grill | Fine | Can crack ceramic, warp thin steel |
| Leftover fuel | Reusable | Ruined |
| Cleanup | Dry ash | Wet slurry, hard to shift |
If a fire genuinely has to be out now, the safer version is lifting the coals with long tongs into a metal bucket of water — rather than pouring water into the cooker.
How long it really stays hot
Ash is an excellent insulator, which is the whole problem
Coals can hold enough heat to ignite paper or dry leaves for a day or more, and the standard guidance is to allow 48 hours before handling ash.
The grey surface looks dead precisely because ash insulates what is underneath it. That is why ash tipped into a plastic bin or a paper sack starts fires hours after a barbecue that everyone had forgotten about.
The payoff: you keep the fuel
Coals starved of oxygen stop burning while still largely intact.
Once cold, shake the ash off through the grate and leave them in place. Next time, light them alongside fresh charcoal and they burn normally — which, over a season, is a meaningful amount of fuel not thrown away.

- You need
- Metal ash can or bucket with a lid
- Tools
- Long tongs, Heatproof gloves
Stop adding fuel and close the lid
Put the lid on and leave it there. A charcoal fire needs airflow, and the lid is the first half of cutting it off.
Shut every vent, top and bottom
Close the top damper and the bottom intake fully. Starving the fire of oxygen is the entire method — with the vents shut the coals go out on their own, usually within an hour or two.
Leave it alone for 48 hours
Do not open it to check. Every look lets air in and restarts the process. Charcoal and ash hold heat far longer than people expect, and the usual advice is to allow a full two days before handling ash.
Check the coals are genuinely cold before disposal
Cold to the touch through a glove, not merely not glowing. A grey coal with no visible ember can still be hot enough to start a fire in a bin.
Put ash in a metal container with a lid
Never a paper bag, a plastic bin or a cardboard box. A metal ash can stored away from the house, decking and anything combustible is the only safe destination.
